Harvest:
Harvest individual leaves when plants reach 8” tall. Pinch off terminal buds to encourage branching and leaf development.  Seeds can also be harvested for use as a grain.

Great micro-greens to use in salad mix; deep red cotyledons; maroon plumes with white seed that is edible and tasty. Amaranth is a tender annual that thrives in the heat of the summer. Young leaves are tender and nutritious and have a delicate flavor when used for salad greens, braising greens or a refined garnish..
